When the kitchen improvises, service pays for it. And many times the root issue is simple: there is no prep sheet that the team actually uses.
What a prep sheet should solve
A strong prep sheet helps the team:
- produce what is needed,
- prioritize by shift,
- avoid stockouts,
- reduce overproduction,
- create clearer accountability.
How to close the prep sheet loop
At the end of the shift, do not just archive the sheet. Review:
- what ran short,
- what was left over,
- what got produced too late,
- which quantities were badly estimated,
- which station repeats the same mistake.
That is when the prep sheet stops being paperwork and becomes a system.
